Feast on the Beach

After scuba diving offshore on a remote island, we came back to a feast on the beach. Cebu in Philippines has many diving resorts and they know how to treat their divers well. This was no exception, as we came back to an amazing feast. What a magnificent feast it was. The tables were set up right on the sand. They are complete with table cloths and a whole array of the freshest food available. The Philippines, like all of Southeast Asia, serves only the freshest sea food and vegetables.

Cebu is a divers paradise. The island is beautiful and the beaches are amazing. After a day of outstanding diving, it is wonderful to come back and find your private feast on the beach. The diving is marvelous on this outer islands, as well as off the main island also. The Thresher Shark dives off Monad Shoal are fantastic. But can anything compare to this feast on the beach. It is a feast fit for a king.

What are some of the best things to eat in Cebu? When I think of good Filipino food, I think of pork and chicken dishes. If you like pork, this is is sure to please. For starters, Zubuchon lechon (whole roasted pig) seems to be a favorite. Divers in the know, like to add Zubuchon lechon to their feasts on the beach. The Filipinos love pork and they are experts on preparing this dish. It is delicious.

The skin of the lechon is as crispy as chicharon. Chicharon is a dish generally consisting of fried pork belly or fried pork rinds. Chicharrón is often made from chicken, mutton, or beef. The Filipino’s have a special way to get the lechon as crisp as Chicharron. They puncture the skin of the lechon while it is cooking to get the crispiness.

Chicken Inasal is another favorite dish to serve on the beach. It is chicken marinated in a mixture of lime, pepper, vinegar and annatto. Then it is grilled over hot coals, basting with the marinated sauce often. It is served with rice and white vinegar and soy sauce. This is a favorite dish in the Western Visayas region of The Philippines. It is a favorite of most of the dive resorts on Cebu beach. It is highly recomended for those after dive feast on the beach.

No matter what you choose for you feast on the beach, if it is chicken or pork, you can not go wrong. There are many different dishes and ways to make chicken and pork dishes. If you like chicken and pork, they are sure to please.

As for beef and lamb, they are also good. They do well on most all dishes that are made with meat or fish. They add many vegetables that come fresh from their gardens. The fish comes from the sea daily. The Philippine Islands are renowned for their scrumptious food. I don’t think you can go wrong with most things on the menu.
