Patishapta pitha or Indian style crepes stuffed with a rice flour batter and coconut filling is a traditional popular Bengali pancake sweet dish dessert recipe that is made during the winter on the auspicious occasion of Poush Parbon or makar sankranti where the pancake are stuffed with creamy Kheer or khowa and soft outer roll that is prepared in most of the Bengali homes .
Patishapta Pithe Recipe

1 cup coconut
2 cups rice flour
3 tbsp milk powder
4 tbsp molasses
1 cup sugar
1 tbsp ghee
Dissolve molasses in 2 cups of water. Add rice flour and mix well, batter should be moderately thin. Keep for 3 hours.
Mix the grated fresh coconut, molasses and the milk powder. Heat ghee in a pan and fry the above mixture for 60 seconds and keep it aside.
Heat the frying pan, pour in 1/4 cup of batter. Move the pan so that the batter spreads all over it. Reduce heat. When pan cake dries up place a tablespoon of prepared filling at one edge.
Roll on the pancake. With the back of a spoon press the roll lightly. When sticky remove from heat. Serve as a dessert in breakfast.
