I want to introduce you to the rava laddu. The original recipe calls for butter and are sacred sweets so is done on special occasions given that you should give a laddu in offering to the gods! They are gluten-free and so perfect for those who are celiac!
Coconut Rava Laddoo Recipe
Prep Time: 30 mins ♥ Cook Time: 20 mins ♥ Total Time: 50 mins ♥ Yield: 4 servings
4 cups semolina
3 cups sugar
5 tsp powder milk
100 gm grated khoya (ricotta cheese)
3 tsp butter
2 tsp cardamom powder
2 tbsp cashew nuts
1 cup coconut
A pinch of Saffron
A pinch of salt
Heat 1 tsp butter in a saucepan and roast the semolina over a low flame till golden brown. Cool and grind to a coarse powder.
Add coconut and fry. Add sugar to the coconut and set aside for 30 minutes.
Heat the rest of the butter and fry chopped dry fruits in it. Sauté the cheese. Mix the powdered semolina, saffron, coconut, salt and add the cardamom to it.
Remove the mixture from stove. When the mixture cools, sprinkle milk and make small round balls.
Garnish with chopped nuts and silver leaf.
