healthy easy broccoli soup recipe vegan


The broccoli soup is done in 20 minutes, just long enough to cook the broccoli and mix all together. The vegetables, which are first sauteed in a pan and then cooked with vegetable broth, are then passed to make a creamy velvety and enriched with thyme leaves. Ingredients

1 broccoli
1 onion
2 tbsp celery
1 tsp ginger
4 tbsp butter
1 carrot
1 tsp black pepper
3 tbsp all-purpose flour
1 cup tomato puree
4 cups water
1 cup cream
1 tbsp pasta
4 tbsp cheese
Salt to taste


Recipe Method

Melt butter in pan, over medium high heat. Add broccoli, celery, pasta, tomato, onion, carrot, celery, ginger, salt and pepper and saute until onion is translucent, for 5 minutes.

Add the flour and cook for a minute, until the flour reaches a blonde color. Add water and bring to boil.

Simmer uncovered until broccoli is tender, for 15 minutes. Pour in cream. With a blender, puree the soup. Add salt and pepper, to taste, and then replace the lid back on the pot.

Serve hot with the cheese.
