Gobi 65 Recipe - Cauliflower Dry Fry Video



An Indian style dry vegetable curry spicy Gobi Roast is very spicy & tasty a tasty, every day side dish with no fuss. This is a fusion of indian and chinese flavors! A simple side dish that goes well with any rice and curry and also a good combination for chappathis or rotis.


Ingredients:

1 cauliflower
2 potatoes
1 tsp ginger paste
2 cloves garlic
1 onion
1 tsp coriander powder
1 tsp turmeric
1 tsp pepper
2 tbsp yogurt
1 jalapeno, minced
3 tbsp oil
1 tsp cumin seeds
1 tsp mustard seeds
2 green chillies
2 bay leaves
1 tsp mango powder
2 tbsp chopped cilantro
Salt to taste
Pinch of asafoetida

Method:

Put cauliflower florets and potatoes in a microwave bowl. Toss lightly with oil. Set aside

In a bowl, mix the coriander powder, pepper, turmeric, and little water to make a paste. Set aside.

Heat a little oil in a microwave bowl. Toss in mustard seeds and cumin seeds and microwave for 2 mins. Add asafoetida, bay leaves and green chillies after seeds crack and microwave for 2 mins. Add in onion, garlic, ginger and jalapeno and Sauté for 5 mins.

Add the spice paste and microwave for 5 minutes. Toss in cauliflower, potatoes, 2 tbsp water and salt. Add in yogurt and mix well. Cover the bowl and let it microwave on medium power for 10 minutes. Make sure to stir gently every 3 minutes.

Add the mango powder and fresh cilantro. Mix everything and cover for a minute. Adjust the salt to your taste.

Serve hot with bread, rice, roti or as a side dish.
