The khichdi is a very popular dish in India, where usually it is eaten as lunch. It is easy to prepare and is considered very healthy so that Indian doctors prescribe it to their patients affected and debilitated. In fact, the mix of vegetables, rice and and lentils can be good for any type of diet. And with the right spices, it may be given a delicate touch by great chefs, especially during the winter when you want something new, scented, fast but not particularly elaborate.

2 cups rice
1 cup lentils
2 green chillies
5 mint leaves
2 tbsp coriander leaves
1 tsp garlic paste
1 tsp ginger paste
1 cup oil
5 curry leaves
3 cups water
1 tsp turmeric powder
Salt to taste
Wash and cook lentils with a pinch of turmeric powder. Set aside.
Fry the sliced onions, cloves, cinnamon and cardamom. When onions are golden add slit green chillies, mint, curry leaves and a part of the coriander leaves. Add salt, ginger and garlic paste. Fry for 2 minutes.
Add the washed, drained rice and chopped tomatoes. Fry for few minutes. Add the cooked lentils, mix well and add 5 cups of water. Cook it for 30 minutes.
Garnish with chopped coriander leaves and serve hot.
