make shrikhand with greek yogurt recipe

Shrikhand is a sweet dish made of strained yogurt. It is one of the main desserts in Gujarati and Maharashtrian cuisine. It is also served with Gujarati thali sometimes as a sweet dish and it is very popular as part of wedding feasts. Preparation of this dish is very simple but it takes some time to process yogurt properly. A popular variation of shrikhand in Maharastra is Amrakhand, which is shrikhand mixed with mango pulp and made homogeneous with a blender. Another variant of shrikhand, Matho, is also very popular and served as a sweet dish or dessert. The preparation method is almost the same, but some fresh fruits are always added in Matho.

Mango Shrikhand Recipe

Prep Time: 30 mins ♥ Cook Time: 20 mins ♥ Total Time: 50 mins ♥ Yield: 4 servings

300 gm curd
4 tbsp sugar
1 tsp cardamom powder
2 cups mango puree
14 Saffron strands
1 tbsp warm milk
1 tbsp pistachios
1 tbsp almonds, cashew
1 tsp rose water
Food colour
Few slices of mango

Recipe Method:

Take out strained yogurt in a bowl. Dissolve the saffron in warm milk and the food colour.

Mix mango puree, powdered sugar, cardamom powder and saffron milk to yogurt and beat well till sugar dissolves.

Mix in most of the almonds and pistachios to the yogurt and sprinkle the rest on the top, add slices of mango and the rosewater.

Serve chilled.
