Carrot Cake Cheesecake Ingredients:

4 cups all purpose flour
4 cups sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup vegetable oil
4 eggs
2 tbsp vanilla extract
1 cup walnuts
1 cup coconut
1 carrot
1 tbsp cream
1 cup butter
salt to taste

Carrot Cake Cheesecake Recipe


Preheat oven to 350 degrees. Grease a cake pan. Line the bottom with parchment paper. Peel and cook carrots. Drain the carrots and purree in a blender until they are smooth. Set aside.

Sift half of the flour, half of the sugar, soda, cinnamon and salt in a bowl and combine well. Add oil, 3 eggs and vanilla. Beat well for about 2 minutes. Fold in walnuts, coconut and carrots. Pour batter evenly into 12 muffin liners in pan.

Using a hand mixer, cream butter and cream cheese until fluffy. Slowly add in little sugar and vanilla. Mix until smooth.
