INGREDIENTS FOR THE BASE COLORS

Eggs medium 10
Cream fresh liquid 250 ml
Honey 30 g
Flour type 00 300 g
Sugar granulated 420 gr
Vanilla 1 berry
Chemical yeast powder 12 g
Food coloring paste or gel: orange, red, blue, green, yellow, purple

FOR THE CREAM YOGURT


Yogurt greek 1250 gr
Sugar vanilla icing 170 gr
Vanilla 1 berry
Gelatin sheets 40 gr
Cream fresh liquid 500 ml



Preparation

To prepare the cake rainbow started from yogurt cream: in a bowl put to soak the gelatine leaves in cold water for at least 10 minutes (1). Meanwhile a small bowl, pour 400 ml of liquid cream, add the seeds of the vanilla bean (2) and the icing sugar (3).


Whip the cream with an electric mixer (4); then drain thoroughly and squeeze the gelatine and pour into a bowl with 100 ml cream previously heated (5): stir with a spoon because the gelatin is fully dissolved. Then pour the cream warm where you have dissolved the gelatin into the bowl with whipped cream (6), and mix the two compounds very gently with a spatula.

United also the greek yogurt (7) and stir the ingredients until you get a smooth cream. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to firm up. Meanwhile, separate the egg yolks from the whites and pour the egg yolks in the bowl of a planetary (you can also use an electric mixer) with honey and seeds of a vanilla bean (8). Operated whips and add half the doses of sugar (9).

When the mixture is light and fluffy (10), put into a large bowl and add the cream very gently (11); stir with a whisk or a wooden spoon and set aside; Meanwhile, whip the egg whites until stiff. When they turned white, also add the remaining half of sugar (12) and continue beating.

United the egg whites to the mixture of eggs (13), stirring from the top down not to dismantle; then sift the flour and baking powder (14); mix thoroughly with a wooden spoon the mixture and divide into 6 bowls (15).

Each bowl with colored dye in gel or paste, adding in small doses to obtain the ideal color: red (16), yellow, green, orange, purple and blue (can dissolve the dye with a tablespoon of water so that amalgams are more easily to the compound). On a baking tray lined with baking paper lying a pastry circle of 18 cm in diameter (you can also use a round mold of the same size) and pour the mixture colored (17); cook a base at a time in a preheated oven at 200 ° for about 10 minutes (fan oven 180 ° for about 5-6 minutes).
