Cinnamon & Vanilla Flavoured Apple Muffins

Spicy, savory, with a hint of sweetness, Muffins are great for breakfast on-the-go or as a mid-day snack with apples adding a rich, sweet-tart, spicy flavour and are sure to please your palate. This fall favorite has a smooth, cakelike texture that nicely complements the chewiness of the fruit. Apple muffins with a crumbly cinnamon topping will smell so good in the oven, you'll want to bake a batch each morning.

Here is a recipe of the Cinnamon Flavoured Apple Muffin:


4 cups all-purpose flour
2 tsp baking powder
1 cup sugar
1 cup brown sugar
1 tsp nutmeg
1 tsp cinnamon
2 cups milk
2 eggs
1 cup butter
1 tsp vanilla
2 apples
Salt to taste


Preheat oven to 190 degrees C. Grease 12 cup muffin pan.

In a medium bowl, mix 3 cups flour, baking powder and salt.

In a large bowl, beat together half of the butter, sugar and eggs until smooth. Mix in vanilla. Add chopped apples and gradually blend in the flour mixture. Stir only until moistened. Spoon the mixture into prepared muffin pan.

In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.

Bake for 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.

Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
